Coconut And Lemon Curd Cake

Hello guys! Today I have found a very good recipe and it does NOT contain chocolate as it is an advanced food it is called Coconut and lemon curd cake.

Batter

1/2 cup of coconut milk
1 cup of GAPS yoghurt (or homemade yoghurt)
8 eggs
1/2 cup of honey
1 cup of coconut flour
1/2 teaspoon of salt
1 teaspoon of baking soda
6 tablespoons of coconut oil (or butter)
1 tablespoon of vanilla extract

Lemon curd

1/2 cup of honey
4 eggs
3 egg yolks
1/4 cup lemon zest
1/2 cup of lemon juice
1/8 teaspoon of salt

Method

Preheat the oven to 180C and grease a cake tin. Put all of the batter ingredients into a blender and mix until combined. Pour batter into the cake tin and cook for 40-45 minutes. For the lemon curd mix the honey, eggs, yolks, lemon zest, salt, and lemon juice then strain over a bowl, then put in the fridge for 2 hours. To finish it off add some coconut cream and frozen berries.
This cake has a lot of eggs in it but the taste makes up for everything.
